Description and list of what I used to make this party treat;
Ingredients
3c -Gizzard
3 -Ripe Plantain
1 -Onions
1 -Tomato
1/2 -Lemon
1/2 tsp Thyme
1/2 tsp Curry
6 Hot Chilli Pepper
1 tsp Minced Garlic
1 tsp Minced Ginger
1 tsp Mixed Herbs
1/2 tsp Salt
2 cups Sunflower Oil
1/3 cup Extra Virgin Olive Oil
Procedure
Gizzard
Wash your gizzard, drain and transfer into a lighted pot
Add your seasoning from your garlic down to your salt
Leave to steam for 10 min
Check after the 10 min and add some chilli peppers.
Add two cups of water and cook for 30min till well done.
Take out from the water and drain.
Frying
I will be using my air fryer to fry it to save time. But frying with out;
Pour about 2cups of sunflower oil in a frying pan, leave to heat for 5min
Add your gizzard to the oil
Leave to fry till golden brown
Take out when fryed
Plantain
Wash and peel off the back of the plantain
Cut the plantain in cubes and as small as possible, the smaller the better.
Place a frying pan on a medium heat and pour 2 cup of sunflower oil in the pan
Place the plantain in the pan
Let it fry for 5min in each sides
Take it out and drain
Gizzard Plantain Mix
In a pan add your tomato sauce, leave to heat for 5min
Add the gizzard and let it cook for 10min ( this will let the sauce penetrate into the gizzard)
Add the plantain to the mix and stir, leave to cook for 5 - 8min
the food is ready to be served.
Garnish your gizzard and plantain with peppers, onions, tomato and lemons
